Gaza is home to 1.8 million Palestinians, making it the most densely populated place on earth. It also has the highest employment, coming in at a frightening 43%. But there’s a large group of people who want to do something about that – women.
There’s Madeleine Kulab, who’s a local celebrity of sorts, as she’s Gaza’s only female fisherman (pictured). 25-year-old Mariam Abultewi is starting a car-sharing tech company that’s similar to our own Uber. And lastly, there’s Gazan cook Jameela Dallol who opened a community initiative called “Dallol’s Kitchen.” Sadly, her kitchen was destroyed in last summer’s war, but there are plans to reopen this year.
Dallol is known for introducing (or re-introducing) to the region a Palestinian dish called Musakhan (roasted chicken baked with onions, sumac, spice, saffron and fried pine nuts). “Our Palestinians brothers and sisters live in the West Bank, but the situation has separated us so much that we don’t even know our own meals,” says Ms. Dallol.
